RECIPE: APPLE BUTTER

1 quart sweet cider                                                     ¾ cup sugar
2 ¼ lb. tart apples, cut   into quarters (unpeeled)        1/8 tsp. cinnamon
pinch of cloves
            Cook cider until it is down to 1 pint. Add apple quarters. Cook until soft; stir frequently. Rub through sieve. Add other ingredients. (Lemon Juice might be added to improve flavor, if desired.) Cook until thick and glossy. Pour into hot sterilized jars. Seal partially. Process in boiling water for 5 minutes. Complete sealing of jars.

March 26, 2011 and March 27, 2011 from Mother's Journal

Saturday March 26 Jenny and Charles were here for the day and we had a great time. We had Angie and bobby over for desert in the evening. Angie had made egg custard and Christina coconut pie. So we had plenty of good rich dessert. Ann had made a big kettle of chicken and dumplings Mexican style. This had a little bit of everything zucchini, red, yellow and green bell peppers, onions every kind of vegetables along with garlic toast; lots of fun popping corn and playing with our new popper.

Sunday March 27 Jack and Teresa are coming today. Jack plans on doing Sunday school then on the way and Brother Elmer do Church service. Ann has a pot of cowboy beans going in the crock pot and a ham in the oven for sandwiches. And we have egg custards to have for dessert. Well guess what the two old love birds got lost. They went towards Corbin instead of Stanton.

RECIPE: CHOW CHOW RELISH

Alberta Thomas Brandon

Place in pot:
About 1 quart vinegar (enough to cover)
Sugar
Whole pickle spice

Grind:
½ bushel green tomatoes                     6 sweet red or green peppers    1 bag carrots                                                  
3 lb. onions                                          ½ tsp. pepper in ½ cup salt                                                                 vinegar and sugar
1 medium head cabbage                    

Cook all ingredients over medium heat until comes to boil. Simmer for about 15 minutes. Pour into hot sterilized jars. Seal at once.

March 20, 2011 from Mother's Journal

March 20, 2011           I wish I had dated each page, before I used it. Dream from night before: my engagement ring was so tiny but it was all Harold could afford to give me; they just didn’t make any ring any bigger or better than mine. Through the years it wore thin and finally broke so Harold said he would get me another one. I told him no, that I loved my little diamond so we agreed to keep it in another setting and had it set into a black onyx ring. So we had the jeweler to put my beautiful little diamond in the middle of the black stone. That was my anniversary gift that year; so the plan was as we could afford it every 10 years we would add another small diamond onto the black one; but we never got around to it. I kept it in my jewelry box and one weekend Jean was visiting and she and her husband or friend were going to a special dance and she borrowed it to wear. She forgot to take it off and then later was doing a flower bed at my house on Bardstown Road. It was under my bedroom window out front side of the house. She lost the ring there. Last night, after never finding the ring, I dreamed I was digging in my flower bed at that same spot and found my ring thirty one years later.

We have our ups and downs good days and bad days, but all could find a good laugh after awhile. But there was only thing that all three kids did together was be ? and if one had the children they would all get in, all would be bedlam but again we could laugh about it later as the kids got older we would have to count noses on the weekend to see how many extra biscuits to bake or how many would be there for lunch or supper. Their father had a garage and on week ends sometimes week nights he would bring some strange people to stay over so he could get parts the next morning to get them back on the road.
I have had carnival workers, preachers, you name it; we had them but he would say there was a little bit of good in everybody and he knew that we were safe and God would watch over us. We made friends that we stayed in contact with for years because we took them in and gave them food and lodging until he got them on the road again.

One couple from Indiana spent a weekend with us and she stayed with me at home while they worked on the car. So by the time they got home with car I told Harold what he couldn’t wait to tell me. I knew she was my first cousin. Her father and my father were brothers. I asked who she was before she married – she was a Shoupe. I said I was too; so who was your father Oddie. Who was yours? – Leonard. So they were brothers and we didn’t all go to grandmas at the same time. They had moved to Tennessee which is where they were coming back from to there home in Indiana. Her father was my Uncle Oddie, who was a Church of God preacher that handled snakes. He had a big family and they never traveled with the children the older ones took care of the smaller ones and they would go away for a week at a time for revivals and not many people had cars back then either. I guess that’s what my aunt meant when she said honey your family is rich. She meant my parents always with us or us with them, if mom and pop go so did we and that’s the way it was.

RECIPE: PICKLED HOT PEPPERS

½ cup salt                                            4 cups hot peppers

            On a biscuit board wash, cut and slice peppers (can be sliced round or lengthwise). Any peppers you are pickling put into a crock bowl and soak overnight.
            To soak: Mix salt to 4 cups hot peppers and finish covering with water.
            The next day drain but don’t rinse the peppers. Fry peppers in oil and pack in ½ pint sterilized jars. This is good with beans, as a relish or on pizza. You can mix up mild peppers with the hot, if you wish.

April 2011

Just had breakfast and my meds; Stacy, my nurse came and took my vital signs; said everything was good so there is another praise. Just that my pain pill was glad because the arm had started to pain some; now I am going to take a nap and Ann is going to go have a paper notarized at the bank and pick up some food. I still have a good appetite. Speaking of food; Ann fixed my favorite meal last night – greens, beans and fried potatoes with corn bread. I really ate too much, everything was so good.


Dan and Darline went to Florida for a visit. They just got back. Dan came over yesterday for awhile. It seems he gets sick as soon as he gets back. I know he needs a happy medium; the winters here are rough, the heat is too much there in the summer. So I guess maybe some where in between the hot or cold weather between here and Florida. Dana was born in Georgia and they liked there so much I sure thought that would be where they would return. I guess we all base our feeling on the grandchildren. Mine are so scattered there is no way I can be near all of them; but most of them are in this area. I really enjoy one or two at a time coming by and playing a game Yahtzee or cards with me. I can’t set up more than a game or two at a time but, it gives Ann a break. She doesn’t leave me to go to the bank or post office; so while one of the kids play a game with me she will get some time to go there.


But I am having good and bad days; it seems the chest is the worst pain and seems to be spreading fastest; but I take each day at a time and thank the Lord for each day I have. I am sure it will get worse all the time; but I thank God for every day and night and pray that I can go quick in my final days. I have had a good life and have really enjoyed the fact that I feel I have made some one happy and I don’t want them to cry at my going. I want them to remember our good times and we have had many happy times together – like most families.

RECIPE: MEDIUM HOT PICKLED PEPPERS

Banana peppers (non-hot)*                             2 cups white vinegar
6 quarts water                                                 garlic
¾ cup pickling salt                                          dill weed
1 hot pepper each jar

            *Use non-hot banana peppers.
            Place one hot pepper, one clove of garlic and some dill weed or dill seed in each jar and then cold pack. Boil the brine a couple of minutes and pour over the peppers. Take out the seeds, except for the one hot pepper, in the center. Any hot pepper can be used but a red hot pepper in the center will be more visible.
