RECIPE: APPLE BUTTER

1 quart sweet cider                                                     ¾ cup sugar
2 ¼ lb. tart apples, cut   into quarters (unpeeled)        1/8 tsp. cinnamon
pinch of cloves
            Cook cider until it is down to 1 pint. Add apple quarters. Cook until soft; stir frequently. Rub through sieve. Add other ingredients. (Lemon Juice might be added to improve flavor, if desired.) Cook until thick and glossy. Pour into hot sterilized jars. Seal partially. Process in boiling water for 5 minutes. Complete sealing of jars.
