ALBERTA THOMAS BRANDON’S CARROT CAKE
2 teaspoons cinnamon 1 ¼ cup oil
2 cups sifted flour 2 teaspoons baking powder
2 teaspoons soda 3 cups grated carrots
4 unbeaten eggs ½ cup chopped nuts
2 cups sugar
ICING
1 (8 oz.) pkg. cream cheese ½ teaspoon rum flavoring
1 – l pound box powdered sugar ½ teaspoon vanilla
1 stick margarine or ½ cup butter 1 pinch salt
Sift together cinnamon, soda, baking powder and sifted flour. Mix together the sugar, oil and carrots. Alternately add dry ingredients to cream ingredients and add eggs and nuts. Bake at 300 degrees for 1 hour in a 8X12X2 inch pan.
