BASIC BAKING POWDER BISCUITS
3 cups flour 4 Tbsp. shortening 3 tsp. baking powder ¾ cup milk 1 tsp. salt
Sift and measure the
flour. Add dry ingredients to flour; sift again. Cut in shortening with 2
knives or pastry blender and blend until the mixture resembles coarse crumbs.
Add milk and mix with fork until the flour makes a smooth dough. Turn out on
floured board; knead lightly, about ½ minute. Roll to thickness of ½ inch. Cut
into rounds with floured biscuit cutter. Brush tops lightly with melted butter.
Bake on greased baking sheet in hot 450 degree oven for 12 to 15 minutes.
Variation: For Whole
Wheat Biscuits, substitute 1 cup unsifted whole wheat flour for 1 cup of white
flour.
